Tuscan Avocado Salad with White Beans

Place the drained, rinsed white beans in a medium bowl. Add sliced red onion, celery slices, crumbled feta cheese and avocado chunks. Toss together in the vinaigrette. Add salt and pepper. Serves 4-6


1 can (15 oz.) white cannellini beans, drained and rinsed
1 small red onion, sliced thinly
2 stalks of celery, washed and sliced about ½ inch
½ cup crumbled feta cheese
¾ cup slightly firm avocado, diced into ½ inch pieces
3 Tbsp. red wine and olive oil vinaigrette
Salt and pepper to taste
