Avocado, Lime and Mint Relish

Combine all ingredients and mix gently. Makes about 2 cups.


2 semi-firm avocados, diced
1 lime, sliced thin, then cut into wedges
ΒΌ cup fresh mint leaves, washed and cut into thin strips
2 Tbsp. fresh lime juice
3 Tbsp. olive oil
