Avocado Cup Cobb Salad

Instructions

Divide all ingredients equally among four entree-sized plates. On each of the plates loosely arrange: Six whole or torn romaine leaves; the grilled chicken breasts in equal portions; four hard boiled egg wedges; the tomato wedges; two strips of bacon broken into a few pieces; the corn kernels; sprinkle half the blue crumbles. Put a half avocado on each plate, fill the cavity with dressing and sprinkle the rest of the blue cheese crumbles. Add a little freshly ground pepper, if desired. Serves 4

Ingredients

2 chicken breasts, grilled
24 small romaine lettuce leaves, washed
4 hard boiled eggs cut into wedges
8 cocktail-sized tomatoes cut into wedges
8 slices of crispy bacon
½ cup fresh corn kernels
½ cup blue cheese crumbles
½ cup blue cheese dressing
2 small avocados, halved, seeded and shell removed
